Let’s face it, Monday mornings are not easy! Between getting the kids ready for school to catching the right train for work and leaving some all important snooze time on your alarm, there’s not a lot of time left for a healthy breakfast. It’s amazing to think how almost a third of us skip this essential meal which makes us lose out on B vitamins, protein and fibre. A good breakfast isn’t actually as hard as you think and it only takes a little weekend preparation…

I like to make a tub of granola to get me through the week. Granola is a great breakfast option as it’s packed full of nutrients and is a great addition to yoghurt or cereal. Homemade granola, like most things, is a lot better than the shop bought stuff and really easy to do. Just follow this simple recipe and leave the house feeling ready for the day.

Ingredients

IMG_2763240 g jumbo oats
200 g pecan nuts
100g cashew or Brazil nuts
175g sunflower seeds
175g pumpkin seeds
100g linseed
200g dried fruit
3 tablespoons coconut oil
3 teaspoons ground cinnamon
3 tablespoons maple syrup

Method

Preheat oven 170c fan

Place all dried ingredients into a large bowl except the dried fruit
Melt coconut oil with maple syrup and add cinnamon
Mix into the dry ingredients then place onto a large oven tray
Bake for about 20-25 minutes and turn every 5 minutes so it doesn’t burn
Leave to cool then add the fruit
It will last up to two weeks in an airtight container
